Subtitles are essentially ways to provide more detail in your headings, which serve to help your paper flow and increase the reader's understanding. For the headings you only want to capitalize the first word (unless it's a proper noun). In terms of the headings you sent, they seem good to me but I am not an expert on the topic you're writing about, so you may want to consult your instructor. If you have more detailed APA questions, I recommend using this online source: it shows you good examples of how to do in-text citations: http://bcs.bedfordstmartins.com/resdoc5e/RES5e_ch09_s1-0001.html
For APA bibliography questions, you'll want to look here for examples or instructions: http://bcs.bedfordstmartins.com/resdoc5e/RES5e_ch09_s1-0002.html
